  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
  • 2 medium apples (peeled, cored & diced)
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup powdered sugar
  • 12 tbsp milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased 9×5-inch loaf pan with parchment paper.
  2. In a bowl, toss diced apples with brown sugar and cinnamon; set aside.
  3. Cream together softened butter and granulated sugar until fluffy.
  4. Beat in eggs one at a time and add vanilla extract.
  5. In another bowl, whisk flour and baking powder together; gradually mix into butter mixture alternately with milk until just combined.
  6. Pour half the batter into the prepared pan, layer with half the apple mixture, repeat with remaining batter and apples, swirling lightly with a knife.
  7. Bake for 50–55 minutes until a toothpick comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  9. Whisk powdered sugar with milk and vanilla for glaze; drizzle over cooled bread before slicing.
