  • 6 small flour tortillas
  • ⅓ cup salted butter (melted)
  • ¾ cup finely crushed vanilla wafer crumbs
  • 1 tsp ground cinnamon
  • 20 oz canned apple pie filling (or fresh sautéed apples)
  • ¼ cup heavy cream (or full-fat coconut milk)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush both sides of each tortilla with melted butter.
  3. Mix crushed vanilla wafers and cinnamon in a shallow dish, then coat each tortilla.
  4. Let the coated tortillas rest on a wire rack for about 5 minutes.
  5. Shape tortillas over the bars of the oven rack or upside-down muffin tin and bake for 8-10 minutes until golden brown.
  6. In a saucepan, heat apple pie filling with heavy cream until warm and bubbly.
  7. Spoon the filling into each crispy shell and top with whipped cream and caramel sauce as desired.
