- 8 slices turkey bacon (cut into 1/2-inch pieces)
- 1/2 cup finely chopped sweet onion
- 1 cup all-purpose flour
- 2 tablespoons chopped fresh chives
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 3/4 cup milk
- 1 large egg (beaten)
- 1 tablespoon canola or vegetable oil
- 1 cup fresh or frozen corn
- 1/2 cup shredded Monterey Jack cheese
- In a medium skillet over medium heat, cook the turkey bacon until crispy, then add the onions until softened.
- In a bowl, mix flour, chives, baking powder, salt, and cayenne pepper.
- In another bowl, combine milk, beaten egg, and oil until blended.
- Gradually stir dry ingredients into wet ingredients until just combined. Fold in the bacon mixture, corn, and cheese.
- Heat a greased griddle over medium heat. Pour about 1/4 cup batter per cake and cook until golden brown (3-4 minutes per side).
- Serve warm with reserved bacon mixture on top and drizzle with maple syrup.
