  • 8 slices turkey bacon (cut into 1/2-inch pieces)
  • 1/2 cup finely chopped sweet onion
  • 1 cup all-purpose flour
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup milk
  • 1 large egg (beaten)
  • 1 tablespoon canola or vegetable oil
  • 1 cup fresh or frozen corn
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. In a medium skillet over medium heat, cook the turkey bacon until crispy, then add the onions until softened.
  2. In a bowl, mix flour, chives, baking powder, salt, and cayenne pepper.
  3. In another bowl, combine milk, beaten egg, and oil until blended.
  4. Gradually stir dry ingredients into wet ingredients until just combined. Fold in the bacon mixture, corn, and cheese.
  5. Heat a greased griddle over medium heat. Pour about 1/4 cup batter per cake and cook until golden brown (3-4 minutes per side).
  6. Serve warm with reserved bacon mixture on top and drizzle with maple syrup.
