  • 1 pound thick asparagus
  • 2 tablespoons olive oil
  • Kosher salt and pepper (to taste)
  • 1 teaspoon Italian seasoning
  • 2 pints cherry tomatoes on the vine
  • 1/2 cup freshly shaved parmesan cheese (or dairy-free alternative)
  • 2 tablespoons balsamic glaze
  • Optional: 1 tablespoon chopped parsley

Instructions

  1. Preheat your oven to 400ºF (200ºC).
  2. Trim about 1 inch off the ends of the asparagus and place them on a lined sheet pan. Drizzle with 1 tablespoon olive oil, season with salt and pepper, and toss to coat.
  3. On the other side of the sheet pan, add cherry tomatoes, coating them with remaining olive oil, salt, and pepper.
  4. Sprinkle everything generously with Italian seasoning. Bake for about 8 minutes until veggies begin to soften.
  5. Remove from oven, sprinkle shaved parmesan over the top, and broil for an additional 1-2 minutes until cheese is bubbly and golden.
  6. Drizzle with balsamic glaze before serving warm.
