Ingredients

Scale
  • 4 medium Yukon Gold potatoes, peeled and diced
  • 6 slices turkey bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 green onions, chopped

Instructions

  1. In a large pot over medium heat, cook diced turkey bacon until crispy. Remove the bacon but retain the grease in the pot.
  2. Sauté chopped onion and minced garlic in the residual grease until translucent (about 3 minutes).
  3. Add diced potatoes and chicken broth; bring to a boil. Reduce heat and let simmer until potatoes are tender (about 15 minutes).
  4. Blend the soup until smooth using an immersion blender or by carefully transferring batches to a regular blender.
  5. Stir in heavy cream and shredded cheddar cheese until melted; mix back in crispy turkey bacon bits.
  6. Serve hot topped with additional cheese and green onions.
