  • 1 1/4 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup unsalted butter (cold and cut into pieces)
  • 2 ripe bananas (about 1 cup mashed)
  • 1 egg (lightly beaten)
  • 1 tbsp water
  • 2 tbsp sugar
  • 1/4 tsp cinnamon
  • 1/2 cup confectioner's sugar
  • 2 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 23 tsp milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together white whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in mashed bananas and lightly beaten egg until just combined; do not overmix.
  5. Turn dough onto a floured surface and knead gently until it comes together; shape into an 8-inch circle.
  6. Brush the top with water and sprinkle with cinnamon sugar before cutting into eight pieces.
  7. Bake for about 15-18 minutes or until light golden brown. Cool on a wire rack.
  8. For a glaze, mix confectioner's sugar, brown sugar, vanilla extract, and milk; drizzle over cooled scones.
