  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1/2-inch chunks; chop onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined sheet pan.
  3. Bake for 20 minutes until slightly softened.
  4. Add chopped broccoli and place chicken on the pan; brush chicken with 1/4 cup BBQ sauce. Bake for an additional 15-20 minutes until chicken is cooked through.
  5. Shred chicken with two forks; toss with remaining BBQ sauce.
