Ingredients

Scale
  • 6 slices turkey bacon
  • 1 cup cooked Cannellini beans
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and drain excess fat, leaving about two tablespoons in the pot.
  2. Sauté the diced onion, carrots, celery, and minced garlic in the remaining fat for about five minutes until softened.
  3. Stir in the cooked beans along with chicken broth, bay leaves, and thyme. Bring to a gentle boil.
  4. Reduce heat and let simmer uncovered for about 30 minutes to blend flavors.
  5. Remove bay leaves before serving. For creaminess, mash some beans against the pot lightly.
  6. Serve hot with optional toppings like crispy turkey bacon bits.
