  • 2 lb beef chuck roast (cut into bite-size pieces)
  • 2 tbsp cornstarch
  • Kosher salt and ground pepper (to taste)
  • 2 tbsp olive oil (divided)
  • 1 large onion (diced)
  • 2 celery stalks (chopped)
  • 2 large carrots (peeled and sliced diagonally)
  • 8 oz button mushrooms (halved or quartered)
  • 12 oz white potatoes (peeled and cut into cubes)
  • 8 cups low sodium beef broth
  • 1/4 cup tomato paste
  • 4 cloves garlic (pressed)
  • 2 tbsp Worcestershire sauce
  • 1/2 cup uncooked pearl barley
  • 1 bay leaf

Instructions

  1. Coat the beef pieces with cornstarch and season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat.
  3. Add the seasoned beef in batches, searing until golden brown on all sides; set aside.
  4. In the same pot, add another tablespoon of olive oil if needed; sauté the onion, celery, and carrots for about five minutes until fragrant.
  5. Return the beef to the pot along with mushrooms, potatoes, broth, tomato paste, garlic, Worcestershire sauce, barley, and bay leaf; stir well.
  6. Bring to a boil then reduce heat to low; cover partially and simmer for 30–40 minutes or until beef is tender.
  7. Remove bay leaf before serving; garnish with fresh herbs if desired.
