  • 1 tablespoon vegetable or olive oil
  • 1 large leek, cleaned and chopped (white and light green parts only)
  • 1/3 cup shaved or chopped carrots
  • 3 cloves garlic, minced
  • 4 caps shiitake mushrooms, cleaned and thinly sliced
  • 3 pieces baby bok choy, tender leaves and firm stems chopped separately
  • 1/4 cup lite soy sauce
  • 5 cups chicken or vegetable broth (2 cans plus 1 cup of water)
  • 2 teaspoons sesame oil
  • 2 teaspoons Better Than Bouillon, chicken or mushroom (optional)
  • 1 1/2 pounds frozen potstickers, wontons or dumplings (minis recommended, no need to thaw)
  • 1/3 cup thinly sliced green onions (about 2 green onions)
  • sesame seeds (for topping)

Instructions

  1. Heat oil in a large pot over medium heat. Sauté chopped leek and carrots until softened (3-4 minutes). Add minced garlic and sliced mushrooms; cook for another 2-3 minutes.
  2. Stir in chopped bok choy stems; cook until slightly tender (about 2 minutes).
  3. Pour in soy sauce and broth; bring to a simmer.
  4. Add frozen potstickers directly into the pot; cook according to package instructions (5-7 minutes).
  5. Stir in bok choy leaves and green onions. Serve hot, garnished with sesame seeds.
