  • 1/2 tablespoon extra virgin olive oil
  • 1 tablespoon minced garlic
  • 1 sweet yellow onion, diced
  • 1 jalapeño, diced (seeds removed)
  • 2 pounds ground bison
  • 1 1/2 teaspoons kosher salt
  • 2 cans (15oz each) fire-roasted tomatoes
  • 1 can (15oz) red kidney beans, drained and rinsed
  • 1 can (15oz) black beans, drained and rinsed
  • 1 pint baby bella mushrooms
  • Spices: chili powder, cumin, garlic powder, onion powder

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add minced garlic, diced onion, and jalapeño; cook for about 3 minutes until fragrant.
  2. Add ground bison along with salt and pepper. Cook until browned while breaking up the meat.
  3. Stir in fire-roasted tomatoes, drained beans, mushrooms, and spices. Mix well.
  4. Cover and simmer for about 2 hours on low heat if using a Dutch oven or set on low in a slow cooker for several hours.
  5. Taste and adjust seasonings before serving hot with desired toppings.
