  • 2 Tsp Olive Oil
  • 1 15 oz Can Black Beans (drained)
  • ½ Cup Finely Chopped Onion
  • 2 Tsp Chili Powder
  • Salt and Pepper to taste
  • 1½ Cup Reduced-Fat Cheddar Cheese (divided use)
  • 8 Corn Tortillas
  • 1 10 oz Can Red Enchilada Sauce
  • ½ Cup Diced Tomatoes
  • 1 Tbsp Chopped Cilantro

Instructions

  1. Preheat your oven to 350 degrees F and coat an 11”x7” baking dish with cooking spray.
  2. Heat olive oil in a medium pan over medium-high heat. Add chopped onion and sauté for about 3-4 minutes until softened.
  3. Stir in drained black beans, chili powder, salt, and pepper. Cook for an additional 2-3 minutes.
  4. Warm corn tortillas in the microwave covered with a damp paper towel for about one minute until pliable.
  5. Divide the black bean mixture among the tortillas and sprinkle each with cheese before rolling tightly.
  6. Place rolled tortillas seam side down in the baking dish.
  7. Pour red enchilada sauce over the top and sprinkle with remaining cheese.
  8. Bake for about 20 minutes or until bubbling and golden brown.
  9. Garnish with diced tomatoes and chopped cilantro before serving.
