  • 30 ounces black beans (drained and rinsed, 2 cans)
  • 14.5 ounces diced tomatoes (one can)
  • 1 1/2 cups vegetable stock
  • Juice of 2 limes
  • 2 tablespoons gluten-free flour
  • Fresh cilantro (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté diced onion until soft, about 3–4 minutes.
  2. Add chopped sweet potatoes, minced garlic, taco seasoning, and kosher sea salt; sauté for an additional minute.
  3. Stir in black beans, diced tomatoes, and vegetable stock. Bring to a boil, then reduce heat to low and simmer partially covered for about 20–25 minutes until sweet potatoes are tender.
  4. In a small bowl, whisk lime juice with gluten-free flour until smooth. Stir into the stew during the last five minutes of cooking to thicken.
