  • 1 1/2 cups frozen or fresh blueberries
  • 2 tablespoons honey or agave (for blueberry sauce)
  • 2 tablespoons water (for blueberry sauce)

  1. In a large bowl, combine coconut milk, vanilla extract, almond milk, honey/agave, and chia seeds. Whisk together until well mixed.
  2. Let the mixture sit for 15 minutes to allow the chia seeds to absorb some liquid. Stir again before refrigerating.
  3. Cover and chill in the refrigerator for at least 4-6 hours or overnight until thickened.
  4. For the blueberry sauce: In a saucepan over medium heat, combine blueberries, honey/agave, and water. Cook until boiling (about 3-4 minutes).
  5. Gently mash the blueberries with a fork while simmering on low heat for another 5-10 minutes until thickened.
  6. Cool the sauce completely before assembling your pudding by layering chia pudding with blueberry sauce in jars.
