  • 6 oz cream cheese (room temperature)
  • 1 large egg
  • 1 cup fresh blueberries
  • ½ cup Greek yogurt
  • ¼ cup vegetable oil
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon flour (to toss the blueberries)
  • ¾ cup powdered sugar
  • 1 ½ – 2 ½ teaspoons milk or cream

Instructions

  1. Preheat oven to 425°F (220°C) and line a muffin pan with paper liners.
  2. Toss half of the blueberries with 1 tablespoon of flour to prevent sinking.
  3. In a bowl, mix flour, baking powder, and salt together; set aside.
  4. In another bowl, whisk egg and sugar until combined; add Greek yogurt, oil, and vanilla extract.
  5. Combine wet and dry ingredients gently; fold in floured blueberries.
  6. Mix cream cheese with sugar, cornstarch, and vanilla for the filling.
  7. Fill muffin cups partially with batter, add cream cheese filling, then top with remaining batter.
  8. Sprinkle streusel topping over each muffin before baking.
  9. Bake for 22-25 minutes until golden brown; cool before glazing.
