  • 2 heads of fresh broccoli (about 1.5 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup roasted and salted sunflower seeds
  • 1011 strips cooked turkey bacon (chopped)
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 and 1/4 cups mayonnaise
  • Zest and juice from 1 lemon
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • Kosher salt and black pepper to taste

Instructions

  1. Cook the turkey bacon until crispy (baking recommended). Let cool and chop into bite-sized pieces.
  2. In a large bowl, whisk together mayonnaise, lemon zest and juice, white grape juice vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper until well combined.
  3. Chop the broccoli into small florets and add them to the dressing along with cranberries, sunflower seeds, cheddar cheese, and most of the chopped bacon.
  4. Stir everything together until well-coated in dressing.
  5. Chill in the refrigerator for at least 20 minutes before serving to enhance flavor.
