Ingredients

Scale
  • 10 tablespoons unsalted butter (browned)
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin puree
  • 3/4 cup semisweet chocolate chips

Instructions

  1. Brown the Butter: In a saucepan over medium heat, melt the butter until golden brown and fragrant. Remove from heat and allow to cool slightly.
  2. Mix Sugars: In a large bowl, combine the browned butter with granulated sugar and light brown sugar until well blended.
  3. Add Pumpkin and Vanilla: Stir in pumpkin puree and vanilla extract until smooth.
  4. Combine Dry Ingredients: In another bowl, whisk together flour, sea salt, baking soda, cinnamon, ginger, nutmeg, and cloves. Gradually add this mixture to the wet ingredients until just combined.
  5. Fold in Chocolate Chips: Gently fold in semisweet chocolate chips until evenly distributed throughout the dough.
  6. Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  7. Bake: Preheat your oven to 350°F (175°C). Scoop tablespoon-sized balls of dough onto lined baking sheets and bake for 10-12 minutes or until edges are golden.
  8. Cool: Let cookies cool on the baking sheet for a few minutes before transferring them to wire racks.
