  • 1 pound boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper until well coated.
  3. Pour half of the buffalo sauce over the seasoned chicken.
  4. Line a baking sheet with parchment paper or aluminum foil, place seasoned chicken on it, and bake for 20-25 minutes until they reach an internal temperature of 165°F (75°C).
  5. Remove the chicken from the oven, let it rest for 5 minutes, then shred using two forks or chop into bite-sized pieces.
  6. Prepare rice according to package instructions, or sauté cauliflower rice in olive oil for 5-7 minutes until tender.
  7. In each bowl, place a generous scoop of rice as your base, followed by heaps of shredded buffalo chicken.
  8. Top with chopped celery, halved cherry tomatoes, and slices of avocado.
  9. Drizzle with ranch dressing and finish with freshly chopped parsley as garnish.
