  • 2 pounds potatoes (diced into 1/2-inch cubes)
  • 2 tablespoons olive oil
  • 2 pounds skinless, boneless chicken breast (cut into 1/2-inch cubes)
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2/3 to 1 cup Frank's redhot kosher buffalo wings sauce
  • 1/4 cup tomato paste
  • 2/3 cup chicken broth
  • 8 ounces cream cheese (at room temp)
  • 1 1/2 cups shredded Mexican cheese blend
  • 1 cup crumbled blue cheese
  • 1 cup diced green onions

Instructions

  1. Preheat your oven to 400°F.
  2. Steam the diced potatoes for about 10 minutes until fork-tender.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for around 6-8 minutes until fully cooked.
  4. Stir in buffalo sauce, tomato paste, chicken broth, and cream cheese until combined.
  5. Layer half of the seasoned potatoes in a greased casserole dish, followed by half of the buffalo chicken mixture and three-fourths of the shredded cheese. Repeat layers.
  6. Cover with foil and bake for about 35-40 minutes; then broil uncovered for an additional 2-4 minutes until golden brown.
  7. Finish with crumbled blue cheese and green onions before serving.
