  • 1 small butternut squash (cubed, about 6 cups)
  • 3 tablespoons olive oil
  • Kosher salt and pepper to taste
  • ½ teaspoon cinnamon powder
  • 1 cup milk of choice
  • 1½ cups cottage cheese
  • ½ cup grated parmesan cheese
  • 56 garlic cloves (minced)
  • 1 large sweet onion (diced)
  • 22 ounces button mushrooms (diced)
  • 1 large zucchini (small diced)
  • 1 red bell pepper (small diced)
  • 9 lasagna sheets
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 425°F.
  2. On a lined baking sheet, toss cubed butternut squash with olive oil, salt, pepper, and cinnamon. Roast for about 30-35 minutes until tender.
  3. Once roasted, blend the squash with milk, cottage cheese, and parmesan until smooth.
  4. In a skillet over medium heat, sauté onion and mushrooms in remaining olive oil for about 10 minutes. Add zucchini, bell pepper, and garlic; cook for an additional 5 minutes while seasoning with salt and herbs.
  5. Boil lasagna sheets until al dente according to package instructions; drain well.
  6. In a baking dish, layer with squash sauce, noodles, sautéed veggies, and mozzarella cheese; repeat layers twice more.
  7. Lower the oven temperature to 375°F. Cover the lasagna with foil and bake for about 30 minutes, then uncover and bake for an additional 10-12 minutes until bubbly and golden brown.
