  • 2/3 cup cooked, mashed butternut squash
  • 1/2 pound mezzi rigatoni
  • 1 1/4 cup shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground pepper

Instructions

  1. Cook the mezzi rigatoni according to package instructions until al dente; drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Whisk in the flour to form a roux, cooking until golden brown.
  3. Gradually add milk while whisking continuously until the mixture is smooth. Stir in salt, nutmeg, ground pepper, and tabasco sauce.
  4. Mix in cheddar, smoked gouda, and parmesan cheeses until melted and creamy.
  5. Fold in the cooked pasta and mashed butternut squash until evenly combined.
  6. Transfer to a greased baking dish and bake at 350°F (175°C) for about 20-25 minutes until bubbly and golden brown.
