  • 2/3 cup granulated sugar
  • 1 1/2 teaspoons all-purpose flour
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour (for carrot cake layer)
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar (for carrot cake layer)
  • 1/3 cup packed light-brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 1/3 cups finely grated carrots

Instructions

  1. Preheat oven to 350°F and grease a 9-inch springform pan.
  2. For the cheesecake layer, beat cream cheese and granulated sugar until smooth. Add flour, eggs one at a time, vanilla, and fold in sour cream.
  3. In another bowl, whisk dry ingredients for the carrot cake layer. In a separate bowl, mix wet ingredients: canola oil, applesauce, sugars, eggs, and vanilla. Combine wet and dry mixes before folding in grated carrots.
  4. Pour half of the carrot cake batter into the pan. Layer with cheesecake mixture and top with remaining carrot cake batter. Swirl lightly.
  5. Bake for about 60 minutes or until set. Let cool completely before adding toppings.
