  • 1 sweet onion (diced)
  • 34 garlic cloves (chopped)
  • 1.5-inch knob ginger (peeled and minced)
  • 1 pound carrots (peeled and chopped)
  • 1 medium sweet potato (peeled and chopped)
  • 4 cups low-sodium broth or stock
  • Kosher salt and pepper (to taste)
  • 1 teaspoon red pepper flakes
  • Plain yogurt (optional, to taste)

Instructions

  1. Heat coconut oil in a pot over medium heat.
  2. Sauté diced onion, chopped garlic, minced ginger, and chopped carrots for about 5 minutes until the onions are translucent.
  3. Add in chopped sweet potato and low-sodium broth; bring to a boil then reduce to a simmer.
  4. Simmer for approximately 15 minutes until vegetables are tender.
  5. Remove from heat and use a handheld blender to blend the mixture until smooth. Season with salt and pepper to taste.
