  • 1 lb Bavette steak
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1/4 cup brewed barley tea
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Take the Bavette steak out of the fridge 20 minutes before cooking to bring it to room temperature. Season both sides with salt, black pepper, and garlic powder.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the seasoned steak for approximately 4-5 minutes on each side until browned and cooked to medium-rare (130°F internal temperature).
  3. Remove the steak from the skillet and let it rest for 5-10 minutes.
  4. In the same skillet, melt unsalted butter over medium heat and sauté minced garlic for about 1-2 minutes until fragrant.
  5. Pour in the prepared barley tea and scrape up any flavorful bits from the bottom. Allow it to simmer for about 2-3 minutes.
  6. Stir in heavy cream and simmer until thickened, around 5 minutes.
  7. Slice the rested steak against the grain and drizzle with the barley tea garlic cream sauce before serving.
