  • 1 medium head of cauliflower (about 2 lbs)
  • 4 tbsp unsalted butter
  • 4 garlic cloves
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Prepare the cauliflower by removing leaves and cutting into florets. Rinse under cold water.
  2. Boil salted water in a large pot; add cauliflower florets and cook for 10-12 minutes until fork-tender.
  3. While cooking, wrap garlic cloves in foil with oil and roast at 400°F (200°C) for about 20 minutes until golden brown.
  4. Drain the cauliflower, then blend it with roasted garlic, butter, and heavy cream until smooth. Season with salt and pepper.
