  • 2 bunches baby broccoli (broccolini)
  • 1/2 cup raw hazelnuts
  • 2 ounces sliced baguette, sourdough, or country-style bread (about 2 slices)
  • 1 (12-oz.) jar roasted red peppers, drained
  • 2 Tbsp. tomato paste
  • 1 Tbsp. apple juice vinegar (or apple vinegar)
  • 1 garlic clove
  • 1 tsp. smoked paprika
  • 1/2 tsp. sea salt
  • 1/4 tsp. cracked black pepper
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp. extra-virgin olive oil
  • 1 Tbsp. butter, divided
  • 1 lemon, cut crosswise into fours

Instructions

  1. Preheat the oven to 350°F. Arrange hazelnuts and bread on a baking sheet; toast for 8-10 minutes.
  2. In a food processor, combine toasted hazelnuts, bread, roasted red peppers, tomato paste, vinegar, garlic, smoked paprika, salt, and pepper. Blend while slowly adding olive oil until mostly smooth.
  3. Heat olive oil in a large skillet over medium-high heat. Add baby broccoli and cook undisturbed for 2-3 minutes until lightly charred; stir occasionally until tender (about 5-6 minutes). Toss in half of the butter during the last minute.
  4. Lower heat and add remaining butter; caramelize lemon slices for about 2-3 minutes.
  5. Plate charred broccoli topped with romesco sauce and caramelized lemon slices.
