  • 1/4 cup dried black lentils
  • 1 cup unsalted vegetable stock
  • 1 small head red cabbage
  • 3 Tbsp. extra-virgin olive oil
  • 1/2 tsp. sea salt (divided)
  • 1/4 tsp. freshly ground black pepper (divided)
  • 1/4 cup tahini
  • 1/2 cup fresh basil
  • 3 Tbsp. filtered water
  • 2 Tbsp. fresh lemon juice
  • 1 1/2 tsp. pure maple syrup
  • 1 clove garlic
  • 1/4 tsp. cumin
  • 2 Tbsp. finely chopped pine nuts (optional)

Instructions

  1. Rinse the black lentils and combine them with vegetable stock in a saucepan. Bring to a boil, then simmer for 40-45 minutes until tender.
  2. Slice the red cabbage into wedges and brush with olive oil, seasoning with salt and pepper.
  3. Grill the cabbage wedges in a skillet over medium-high heat for 5-7 minutes per side until charred.
  4. Blend tahini, basil, water, lemon juice, maple syrup, garlic, cumin, and remaining seasonings until smooth.
  5. Serve the lentils atop the charred cabbage wedges and drizzle generously with green tahini sauce.
