  • 1 tablespoon taco seasoning
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté diced onion until translucent.
  2. Add minced garlic and cook for another minute. Then add ground beef; brown until fully cooked.
  3. Stir in black beans, diced tomatoes, and taco seasoning; let simmer for about 5 minutes.
  4. Cook cheese tortellini in boiling salted water according to package instructions until they float.
  5. Combine cooked tortellini with the beef mixture in a large bowl.
  6. Preheat oven to 350°F (175°C). Spread a layer of enchilada sauce in a baking dish.
  7. Transfer the mixture into the dish, cover with remaining enchilada sauce and sprinkle with cheddar cheese.
  8. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10-15 minutes until bubbly.
