  • 1/2 cup light brown sugar
  • 1 cup granulated sugar
  • 1 tsp clear vanilla extract
  • 1 large egg (room temperature)
  • 1 egg yolk (room temperature)
  • 1/2 cup rainbow sprinkles
  • 1 cup golden Oreo pieces
  • 1/4 cup golden Oreo crumbs

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a mixing bowl, sift together flour, baking soda, and salt; set aside.
  3. Blend four Oreos into fine crumbs and measure out 1/4 cup for later use; chop another eight Oreos into small pieces.
  4. In another bowl, cream together room-temperature butter, brown sugar, and granulated sugar until fluffy. Mix in clear vanilla extract, egg, and egg yolk.
  5. Gradually add dry ingredients to the wet mixture until just combined. Gently fold in sprinkles and both types of Oreo mix-ins.
  6. Chill dough for about 20 minutes before scooping onto prepared sheets using a cookie scoop.
  7. Bake for 13-15 minutes until edges are lightly golden. Let cool briefly before transferring to a cooling rack.
