  • 2 garlic cloves (chopped)
  • 1 teaspoon thyme (chopped)
  • 1 bay leaf
  • 5 cups chicken broth
  • Juice and zest of 1 lemon
  • Handful parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sear chicken thighs for about 2-3 minutes on each side until golden brown.
  2. Add diced onion, carrots, red bell pepper, and celery; cook until tender (about 5-6 minutes).
  3. Stir in chopped garlic and thyme; cook until fragrant (about 1 minute).
  4. Pour in chicken broth, add bay leaf and rinsed brown rice. Bring to boil then reduce to simmer for about 20-25 minutes until rice is tender.
  5. Remove chicken, shred it, return it to the soup along with lemon juice and zest. Stir in parsley and season to taste before serving.
