  • lb wild mushroom mix (sliced if too big)
  • 1 onion (diced)
  • 3 garlic cloves (pressed)
  • 1 tsp Italian seasoning
  • 1 large carrot (sliced)
  • 2 celery stalks (sliced)
  • 7 cups low sodium chicken broth
  • 1 cup wild rice mix
  • 1 lb boneless skinless chicken breast
  • 1 cup milk (any variety; 2% recommended)
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Instructions

  1. In a large stockpot, melt butter or ghee over medium-high heat. Add onions, mushrooms, garlic, and Italian seasoning; sauté for about 5–6 minutes until fragrant and onions are translucent.
  2. Stir in carrots, chicken breast, celery, chicken broth, and wild rice mix. Bring to a boil; reduce heat to low and cover. Simmer for approximately 25–30 minutes.
  3. Once the chicken is cooked through, remove it from the pot and shred into bite-sized pieces before returning it to the soup.
  4. Add milk and Parmesan cheese to the pot, stirring until combined. Season with salt and pepper to taste. Simmer for an additional five minutes before serving.
