  • 1 sweet onion (diced)
  • 4 celery sticks (diced)
  • 4 carrots (diced)
  • 1 red bell pepper (diced)
  • 4 garlic cloves (minced)
  • 2 cups cooked chicken (shredded, leftover or rotisserie)
  • 1 teaspoon dried thyme
  • Kosher salt and black pepper (to taste)
  • 1 â…“ cup stelline pastina (star pasta)
  • 7 cups low-sodium chicken stock
  • 2 teaspoons balsamic vinegar
  • Freshly chopped parsley (optional)

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add diced onion, celery, carrots, red bell pepper, and minced garlic. Sauté for about 5 minutes until softened.
  2. Stir in shredded chicken, dried thyme, salt, and pepper.
  3. Pour in chicken stock and add stelline pastina. Bring to a boil then stir in balsamic vinegar.
  4. Reduce heat to simmer for 8-10 minutes or until pasta is al dente.
  5. Serve warm with fresh parsley as garnish if desired.
