  • 1 lb boneless, skinless chicken breast
  • 2 tbsp olive oil (divided)
  • 1 medium yellow onion (diced)
  • 2 celery sticks (chopped)
  • 2 medium carrots (sliced)
  • 23 garlic cloves (minced)
  • 1 (15 oz.) can diced or crushed tomatoes (with juices)
  • 1 large sweet potato (cut into small cubes)
  • 1 large zucchini (diced)
  • 8 oz brown mushrooms (sliced)
  • 8 cups low-sodium chicken stock
  • Kosher salt and pepper (to taste)
  • 2 tbsp fresh chopped parsley

Instructions

  1. Season the chicken with salt and pepper. Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Sear the chicken until golden brown on both sides, then set aside.
  2. In the same pot, add the remaining olive oil, onion, celery, and carrots. Sauté for about 2-3 minutes until they soften.
  3. Add minced garlic and diced tomatoes with their juices to the pot. Stir in sweet potato, zucchini, mushrooms, and pour in the chicken stock.
  4. Return the seared chicken to the pot. Bring to a gentle boil, reduce heat, and let simmer for about 35 minutes until chicken is cooked through and vegetables are tender.
  5. Garnish with fresh parsley before serving.
