  • 1 1/2 cups almond or coconut milk
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1 tablespoon melted coconut oil
  • 1 tablespoon pure vanilla extract
  • 1/4 cup dark chocolate chips
  • 1/2 cup pecans

Instructions

  1. Preheat the oven to 375°F and grease an 8×10-inch baking dish with cooking spray. Line it with parchment paper for easy cleanup.
  2. In a mixing bowl, combine rolled oats, baking powder, pumpkin pie spice, and kosher salt.
  3. In another bowl, whisk the egg until pale and creamy. Add almond or coconut milk, pumpkin puree, honey (or maple syrup), melted coconut oil, and vanilla extract; whisk until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in chocolate chips and pecans gently.
