  • 1 cup raspberries (fresh or frozen)
  • 6 tablespoons unsalted butter (softened)
  • 1 oz full-fat cream cheese
  • 1 and 1/2 to 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). In one bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, cream together softened butter and sugars until light and fluffy.
  2. Beat in the egg and vanilla extract. Gradually mix in dry ingredients until just combined; fold in chocolate chips.
  3. Scoop tablespoon-sized portions onto lined baking sheets, spacing them apart. Bake for about 8 minutes; let cool before frosting.
  4. For frosting, beat together softened butter and cream cheese; gradually add powdered sugar until smooth. Fold in raspberries.
  5. Once cookies are cool, spread raspberry frosting between two cookies to create sandwiches.
