  • 12 tablespoons brown sugar
  • 4 tablespoons vegetable oil
  • 6 ounces coarsely chopped chocolate bar
  • 3 large eggs (separated)
  • 5 tablespoons sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 teaspoons orange zest
  • Pinch fine kosher salt
  • ¼ teaspoon cream of tartar (or citric acid powder)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare ramekins by spraying them with cooking oil and coating with brown sugar.
  2. Melt the chopped chocolate with vegetable oil in a heatproof bowl until smooth. Let cool slightly.
  3. In another bowl, beat egg yolks with 3 tablespoons of sugar until creamy; mix in vanilla and orange zest.
  4. Combine the cooled chocolate mixture with the egg yolk mixture.
  5. In a clean bowl, whip egg whites with cream of tartar until soft peaks form; gradually add remaining sugar and whip to firm peaks.
  6. Gently fold one spoonful of the chocolate mixture into the egg whites, then carefully fold in the rest until well blended.
  7. Spoon the batter into prepared ramekins, smoothing tops evenly.
  8. Bake for 20-25 minutes until puffed and slightly jiggly in the center.
  9. Serve warm, optionally garnished with chocolate pieces or a sprinkle of powdered sugar.
