  • 4 pounds boneless beef chuck roast
  • 4 tbsp taco seasoning
  • Kosher salt and freshly cracked black pepper
  • 2 onions (quartered)
  • ½ cup orange juice
  • ½ cup beef stock
  • Small flour tortillas
  • Guacamole (to taste)
  • Salsa (to taste)

Instructions

  1. Preheat your oven to 325°F (163°C). Season the chuck roast generously with salt, pepper, and taco seasoning on both sides.
  2. Place the seasoned roast in a Dutch oven along with the quartered onions, orange juice, and beef stock. Cover and bake for 3.5 to 4 hours until tender and easily shreddable.
  3. Shred the meat into chunks using two forks; return to the oven if it doesn't shred easily.
  4. Increase oven temperature to 425°F (218°C). Toss shredded meat with onions on a baking sheet and bake uncovered for 15-25 minutes until crispy.
  5. While the meat crisps, prepare guacamole and char tortillas over an open flame. Assemble tacos by spreading guacamole on each tortilla, adding shredded meat, and topping with salsa.
