  • 1/4 cup fresh lime juice (about 2 limes)
  • 4 garlic cloves, minced
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, whisk together coconut milk, lime juice, minced garlic, honey, salt, and pepper to create the marinade.
  2. Coat each chicken thigh in the marinade and refrigerate for at least one hour (or overnight for best flavor).
  3. Preheat your grill to medium-high heat (400°F / 200°C).
  4. Remove chicken from marinade (discard leftover marinade) and place skin-side down on the grill.
  5. Grill for 6-8 minutes until charred; flip and cook for an additional 6-8 minutes until internal temperature reaches 165°F (75°C).
  6. Allow chicken to rest for five minutes before serving. Garnish with chopped cilantro.
