Ingredients

Scale
  • 2 pieces cod fillets (cut into chunks)
  • 1 cup chilled soda water
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • Vegetable oil (for frying)
  • 1 cup cherry blossoms (lightly brined and chopped)
  • 2 stalks spring onion (finely chopped)
  • 1/2 cucumber (deseeded and diced)
  • 1 small knob ginger (peeled and finely grated)

Instructions

  1. In a bowl, mix chilled soda water with all-purpose flour until just combined—lumps are okay.
  2. Coat cod chunks in cornstarch first, then dip into the batter.
  3. Heat vegetable oil in a deep pan over medium-high heat until it reaches about 350°F (175°C).
  4. Fry coated cod pieces one at a time for about 3-4 minutes on each side until golden brown. Drain on paper towels.
  5. While frying, prepare the salsa by mixing cherry blossoms, spring onion, cucumber, and ginger in a bowl.
  6. Serve immediately by topping fried cod with cherry blossom salsa.
