  • 1 ½ cups frozen sweet corn (defrosted and drained)
  • 2 cans creamed corn
  • 1 cup cornmeal
  • ½ cup gluten-free flour (or regular flour)
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp onion powder
  • 6 tbsp butter (melted and cooled)
  • 2 tbsp raw honey
  • 1 cup sour cream
  • 3 medium eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine cornmeal, gluten-free flour, baking powder, salt, and onion powder.
  3. In another bowl, whisk together melted butter, raw honey, sour cream, and eggs until smooth.
  4. Pour the wet ingredients into the dry mixture along with sweet corn and creamed corn; stir gently until just combined.
  5. Transfer to a greased baking dish and spread evenly. Bake for about 55 minutes or until golden brown on top.
  6. Allow to cool for 10 minutes before serving.
