  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper
  • 1 pint cherry tomatoes
  • 1 cup English cucumber
  • ½ cup red onions
  • ⅓ cup fresh cilantro
  • ¾ cup Cotija cheese or plant-based alternative
  • 3 tablespoons avocado oil or extra virgin olive oil
  • ¼ cup lime juice or lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. Cook the corn by boiling or grilling until tender (about 5 minutes). Allow to cool.
  2. While cooling, chop the bell peppers, cherry tomatoes, cucumber, red onions, and cilantro.
  3. In a bowl, whisk together avocado oil, lime juice, apple cider vinegar, honey, Dijon mustard, and spices.
  4. In a large bowl, combine cooled corn and chopped veggies; add the dressing and toss gently. Fold in cheese if using.
  5. Chill in the refrigerator for 20-30 minutes before serving.
