  • ¾ cup beef broth
  • ½ cup Pepper Jack cheese, shredded
  • 16 ounces Velveeta cheese, cubed
  • 1 cup black beans, drained and rinsed
  • ¼ cup red onion, finely diced
  • 1 small jalapeno, seeded and finely diced
  • 1 can diced tomatoes with green chilis, drained
  • Tortilla chips for serving

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef until browned (5-7 minutes), breaking it up with a wooden spoon. Drain excess grease.
  2. Season the cooked beef with salt, black pepper, and red pepper flakes.
  3. Pour in the beef broth and let it simmer for 4-5 minutes.
  4. Reduce heat to medium-low and add Pepper Jack cheese and Velveeta cheese. Stir until melted and creamy.
