  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 3 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup granulated sugar for filling
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Cream together butter and sugars in a stand mixer until fluffy. Add egg and vanilla; mix well.
  3. In a separate bowl, combine flour, baking powder, cinnamon, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  4. Set aside about 2 cups of dough for topping, then press remaining dough into the prepared pan.
  5. Bake crust for about 15 minutes until lightly golden.
  6. In another bowl, mix cranberries, sugar, cornstarch, orange zest, juice, and vanilla; pour over the pre-baked crust.
  7. Crumble reserved dough over the cranberry filling.
  8. Bake for an additional 45 minutes until golden brown. Allow to cool before drizzling with powdered sugar glaze.
