  • 1/2 cup cranberry juice
  • 1/4 cup dried cranberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the butternut squash and sweet potatoes; trim and halve the Brussels sprouts.
  2. In a bowl, toss the vegetables with olive oil, salt, pepper, and thyme. Spread evenly on a parchment-lined baking sheet.
