  • 1 medium carrot (finely chopped)
  • 1 stalk celery (finely chopped)
  • 1 head cauliflower (cut into 1-inch pieces)
  • 2 Tbsp. parsley (chopped, fresh or dried)
  • 1 qt. low-sodium chicken broth
  • 6 Tbsp. all-purpose flour
  • 2 cups whole milk
  • 1 cup half-and-half
  • 12 bay leaves
  • 1 tsp. kosher salt (plus more to taste)
  • 1/2 tsp. black pepper (plus more to taste)
  • 1 cup sour cream (to serve)

Instructions

  1. In a large pot, melt half of the butter over medium heat.
  2. Add chopped onion, carrot, and celery; sauté until softened (5-7 minutes).
  3. Stir in cauliflower and parsley; cook for an additional 5 minutes.
  4. Sprinkle flour over the vegetables; stir to coat evenly.
  5. Gradually pour in chicken broth while whisking to avoid lumps.
  6. Add bay leaves, salt, and pepper; bring to a boil and then simmer for 20 minutes until cauliflower is tender.
  7. Remove bay leaves and blend the soup until smooth using an immersion blender.
  8. Stir in remaining butter, milk, half-and-half; heat through without boiling.
  9. Adjust seasoning as needed; serve hot topped with sour cream.
