  • 1 pound boneless skinless chicken breast
  • 6 cups low sodium chicken broth
  • 1 medium head broccoli, broken into small florets
  • 2 cups milk of your choice (e.g., almond milk)
  • 2 tablespoons gluten-free flour
  • Sea salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, carrots, celery, bell pepper, garlic, and Italian seasoning; sauté for about 5 minutes until softened.
  2. Add chicken breast and chicken broth; bring to a boil. Reduce heat and simmer for approximately 20-25 minutes until chicken is cooked through.
  3. In a small bowl, whisk together milk and gluten-free flour until smooth. Remove cooked chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
  4. Stir in broccoli florets along with the milk mixture; season with salt and pepper. Simmer for another 5-6 minutes until the broccoli is tender.
