  • 7 cups vegetable broth
  • 3 tablespoons butter (divided)
  • 1 yellow onion (minced)
  • 4 cloves garlic (minced)
  • 1.5 cups carnaroli rice (or arborio rice)
  • 0.75 teaspoon fine sea salt (divided)
  • 0.25 teaspoon black pepper
  • 1 lb mushrooms (sliced)
  • 1 tablespoon fresh thyme leaves
  • 0.33 cup grated Parmesan cheese
  • Chopped flat-leaf parsley (for garnish)

Instructions

  1. Heat vegetable broth in a saucepan over low heat; keep warm.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced onion and garlic; sauté until translucent.
  3. Stir in sliced mushrooms and cook until tender.
  4. Add carnaroli rice, stirring for about 2 minutes to toast the grains.
  5. Gradually add warmed vegetable broth, one ladle at a time, stirring continuously until absorbed and creamy, approximately 18-20 minutes.
  6. Stir in mushroom powder, thyme, remaining butter, Parmesan cheese, salt, and pepper; mix until combined.
  7. Let sit for a couple of minutes before serving.
