  • 4 skinless salmon fillets
  • Kosher salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 34 garlic cloves (pressed)
  • 1 cup low-sodium vegetable stock
  • 8 ounces cream cheese
  • 2 tablespoons chopped chives
  • 1/2 teaspoon chili flakes

Instructions

  1. Cook the baby potatoes in boiling water for about 8-10 minutes until just tender. Drain and set aside.
  2. Season salmon fillets with salt and pepper.
  3. In a non-stick pan, heat olive oil over medium heat and sear salmon for 3-4 minutes on each side until golden brown. Remove from pan.
  4. Sauté minced garlic in the same pan for about 30 seconds until fragrant.
