  • 12 oz chicken sausage (mild or spicy, casings removed)
  • 1 medium yellow onion (thinly sliced)
  • 2 bell peppers (red, orange, or yellow, thinly sliced)
  • 3 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper (to taste)
  • Fresh parsley or basil (for garnish – optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve half a cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil and brown the chicken sausage until fully cooked.
  3. Add sliced onions and bell peppers to the skillet; sauté for 5–7 minutes until softened. Incorporate minced garlic for an additional minute.
  4. Deglaze the pan with reserved pasta water.
  5. Stir in heavy cream and let simmer until slightly thickened.
  6. Mix in grated Parmesan cheese until melted smoothly; add the cooked sausage back to the pan.
  7. Combine with cooked pasta, adjusting sauce consistency with reserved pasta water as needed.
