Ingredients

Scale
  • 8 oz pasta (penne or fusilli)
  • 2 tablespoons olive oil
  • ½ small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 5 oz canned tuna (drained and flaked)
  • ½ cup basil pesto
  • ½ cup heavy cream
  • Salt and pepper (to taste)
  • 1 cup baby spinach
  • ½ cup cherry tomatoes (halved)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve about ¼ cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil and sauté chopped onion until translucent. Add minced garlic and sauté until fragrant.
  3. Fold in flaked tuna and basil pesto, stirring well to combine.
  4. Pour in heavy cream and stir continuously until well-blended. If too thick, add reserved pasta water for desired consistency.
  5. Add baby spinach and cherry tomatoes; season with salt and pepper. Cook until spinach wilts.
  6. Combine the cooked pasta with the creamy mixture, tossing well to coat every piece.
